Lemon Herb Grilled Chicken

Ingredients

  • 1.50 pounds Boneless, skinless chicken breasts
  • 1.00 cup lemon juice
  • 3.00 tablespoons olive oil
  • 3.00 cloves garlic clove
  • 1.00 tablespoon Parsley
  • 1.00 teaspoon Dried oregano
  • 1.00 teaspoon salt
  • 1.00 teaspoon pepper
  • 1.00 medium zucchini
  • 1.00 medium bell pepper
  • 1.00 medium onion
  • 1.00 teaspoon thyme

Instructions

  1. In a large bowl, whisk together lemon juice, 2 tablespoons of olive oil, minced garlic, parsley, oregano, salt, and black pepper. Add the chicken breasts and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat. While the grill is heating, toss zucchini, bell pepper, and red onion with remaining olive oil, thyme, salt, and pepper. Spread the vegetables on a baking sheet.
  3. Place vegetables in the oven at 400°F (200°C) for about 20 minutes, tossing halfway through until golden and tender.
  4. Once the grill is hot, grill the marinated chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Allow the chicken to rest for 5 minutes before slicing.
  5. Serve the grilled chicken alongside the roasted vegetables.
