Caprese Panini (Fresh Mozzarella or Turkey)

Grilled sandwich with tomatoes, basil, and melted cheese. Fresh mozzarella for vegetarians or turkey breast for omnivores.

Ingredients
- 4.00 slice sourdough bread
- 6.00 ounce mozzarella cheese
- 4.00 ounce turkey
- 2.00 whole tomato
- ¼ cup basil
- 2.00 tablespoon balsamic vinegar
- 2.00 tablespoon olive oil
Instructions
- Prepare all ingredients: Slice the tomato and fresh mozzarella into rounds. Tear the basil leaves, and take the turkey slices out.
- Heat 1 tablespoon of olive oil in a pan over medium heat. Once hot, add the tomato slices and season with salt and pepper. Cook for about 5 minutes, flipping halfway, until slightly softened.
- In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the fresh mozzarella slices and grill for 2-3 minutes on each side until melted. Remove and set aside.
- In another pan, add the turkey slices. Season with salt and pepper, cooking for about 3-4 minutes on each side until heated through and lightly browned.
- Once all components are cooked, assemble the sandwiches: Layer grilled tomatoes, fresh basil, and either fresh mozzarella or turkey on the ciabatta slices. Drizzle with balsamic glaze.
- Grill the assembled panini in a panini press or on a skillet for about 3-5 minutes until crispy and golden brown. Serve hot.
