Hummus Veggie Wrap

Ingredients

  • 2.00 whole tortilla
  • 0.50 cup hummus
  • 0.50 whole cucumber
  • 1.00 whole tomato
  • 1.00 cup spinach
  • 1.00 whole Carrot
  • ¼ cup feta cheese

Instructions

  1. Prepare the vegetables: Slice 1 medium cucumber into thin rounds. Cut 1 medium red bell pepper into thin strips, removing seeds and membranes. Chop 2 cups romaine lettuce into ribbons. Halve 0.5 cup cherry tomatoes. Thinly slice 0.25 cup red onion.
  2. Lay out 2 large flour tortillas on a clean work surface. Spread 0.75 cup hummus evenly over each tortilla, leaving about 1 inch border around the edges.
  3. Arrange the vegetables in a horizontal line across the center of each tortilla: layer the romaine lettuce, cucumber slices, red bell pepper strips, cherry tomatoes, and red onion slices.
  4. Crumble 0.5 cup feta cheese over the vegetables. Drizzle 1 tablespoon lemon juice over the filling and season with 0.25 teaspoon black pepper.
  5. To roll the wrap, fold in the sides of the tortilla first, then tightly roll from the bottom up, keeping the filling compact. Cut each wrap in half diagonally and serve immediately, or wrap tightly in foil for storage.
